New Spring Menu Items Debut as Part of the Omakase Dining Experience at EPCOT’s Takumi Tei
Disney has announced a new Spring menu for Takumi Tei, a signature dining restaurant at Epcot’s Japan Pavilion. The restaurant offers a two-hour dining experience that features an Omakase tasting menu that runs approximately $250.00 plus tax and tip. An additional semi-course meal is available for approximately $150.00 plus tax and tip. Below, we’ll preview the new menu items available this Spring.

First Course: Takumi Tei Spring Menu
The first course starts with the Ichiju Sansai, considered to be a modern beginning to the multi-course meal. It comes with three in-season dishes:
- Sea Bream: Kombu–cured Sakura style accented with edible gold leaf
- Lightly Fried Tofu in Silken White Miso Broth served with Japanese mustard and pickled cherry blossom
- Salmon Roe & Spring Vegetables dressed in white sesame dressing, garnished with silver leaf
Per the menu: We start with ichiju sansai—one soup, two dishes—the foundation of Japanese cuisine. Inspired by the cha-kaiseki ritual of “four bowls,” this course invites you to open each lidded bowl at once and experience the beginning of your meal with all five senses. Seasonal ingredients and careful preparation set the tone for what’s to come.

Second Course: Takumi Tei Spring Menu
The second course features a sashimi-style offering:
- Charcoal -Grilled Razor Clams & Tataki-style Spanish Mackerel: Served in a clamshell, the dish features sea urchin, wasabi jelly, egg yolk vinegar emulsion, fine myoga julienne, and edible blossoms.
Per the menu, the Sashimi Course is made of pure ingredients with skilled hands. Next, enjoy fresh sashimi that reflects the beauty of the season. We import the best fish from Japan weekly and prepare each cut with expert precision. Sometimes served salad-style, this course highlights the balance between natural flavor and thoughtful presentation.


Third Course: Takumi Tei Spring Menu
The third course is one platter with a variety of offerings:
- Spring Hanami Huassun Platter, which consists of the following:
- Saikyo Miso–Grilled Flounder
- Horse Mackerel “Kosode” Sushi
- Squid & Komatsuna Greens with toasted sesame dressing accented with edible blossoms
- Nanban-Style Marinated Fish accented with paprika amber gelée
- Traditional Tamagoyaki
- Delicately Simmered Prawn
- Broad Beans in Jade-Tinted dashi broth
Per the menu, the Hassun Course offers a taste of the season: The centerpiece of the meal: hassun, a vibrant arrangement of small seasonal bites. Each dish is crafted to reflect the time of year, both in flavor and appearance. From the colors to the plate itself, everything is designed to bring joy to your senses.

- Vegetarian Option
- Char-Grilled Daikon Radish Dengaku glazed with aromatic yuzu miso
- Spinach Temari Sushi served with silken egg yolk vinegar sauce
- Grilled Eggplant & Paprika served with amber jelly
- Komatsuna Greens with Vinegar Miso dressing garnished with edible blossoms
- Simmered White Konjac, accompanied by cherry tomatoes marinated in sweet vinegar
- Simmered Broad Beans in jade-colored broth

Fourth Course: Takumi Tei Spring Menu
The fourth course, referred to as a chilled or warm dish, offers a moment to reflect:
- Greenling (A Fish Dish): lightly coated greenling, lotus root dumpling, petal-carved daikon, and seasoned greens accented with plum sauce and fresh yuzu
Per the menu, this course slows the pace with a gentle dish—either a cool hiyashihachi or a warm, comforting onmono. Selected based on seasonal ingredients, this course offers a quiet, calming moment in your dining journey.

Fifth Course: Takumi Tei Spring Menu

- Crisp Tempura of Japanese Black Wagyu with Sakura-infused mashed potatoes, tender broccolini, sweet sake velouté, and toasted egg crumble
- Char-Grilled Japanese Black Wagyu Sirloin with Sakura mashed potatoes, tender broccolini, velvety sweet sake sauce, and toasted egg crumble (This option is available as an upgrade)
- Crisp Fan-Shaped White Shrimp Tempura with egg yolk vinegar emulsion, fine spring onion, fried eggplant, and tender broccolini
Per the menu, the main course is where East meets West: Our main course brings together Japanese ingredients and French-inspired techniques. This is where tradition meets creativity—where rich flavors, beautiful plating, and a touch of surprise come together in harmony.



Sixth Course: Takumi Tei Spring Menu
The next-to-the-last course is a simple rice course:
- Rice with Pressed Eel: a rice course with pressed eel sushi and shredded egg atop subtle Japanese Sansho pepper and a spinach and silken tofu in a red miso soup
Per the menu, this gentle ending is a simple rice dish, such as sushi or ochazuke. It’s light, aromatic, and designed to bring balance and closure to your meal—an elegant return to the roots of Japanese cuisine.

Final Course: Takumi Tei Spring Menu
The dessert course comes last, offering a matcha tea prepared tableside along with a selection of seasonal sweets. Here are those options:
- Strawberry Baked Cheesecake accented with milk caramel, whipped cream, and viola flower
- House-Made Strawberry Daifuku served with Sakura crystal jelly
- House-Made Sakura Mochi with Sakura crystal jelly, salt-pickled cherry blossom
