First Look: New Menu Items Coming to The Diamond Horseshoe
The Diamond Horseshoe in Liberty Square at Magic Kingdom will welcome a new limited-time pop-up beginning October 4, 2026. Disney has announced a first look at the menu, which will feature new shareable appetizers, specialty drinks, and cocktails inspired by classic frontier fare.
Reservations for the experience will open September 29, ahead of its October 4 debut. Among the new offerings are Sweet Golden Corn Fritters, Queso Fundido with Barbecue Burnt Ends, and several new beverages, including Caramel Root Beer with Sweet Cream and a classic Orange Cream Soda. For those looking for something with a little more kick, the new menu will also include cocktails like the High Plains Huckleberry and Coal’d Fashioned.

Small Plates at the Diamond Horseshoe Pop-Up
Here is a preview of the small plates menu that will be offered when this location opens:
- Charcuterie:Â Cured beef, candied bacon, smoked pork, green chile cheese, smoked cheddar, and pickles
- Glazed Sticky Ribs with cowboy beans and jalapeño crisps
- Queso Fundido with Barbecue Burnt Ends with warm tortilla chips
- Sweet Golden Corn Fritters with cilantro ranch dressing and red chili honey
- Chipotle Chicken Tostada with queso fresco, lime crema, and pickled cactus salsa
- Mini Hot Dog Platter: Wrapped in pastry, served with tortilla chips and a side of queso

You may remember that this special pop-up experience was announced earlier this month. Typically, the saloon-style restaurant offers the same menu as Liberty Tree Tavern; the only difference is the restaurant’s interior theming. However, the Diamond Horseshoe temporarily closed back in May to become Jessie’s Round-Up as part of Disney’s Cool Kid Summer offerings.
Cool Kids Summer ends on September 8th. At that time, Jessie’s Round-Up will close, and the location will begin preparations for this new pop-up experience.
